French Onion Soup

I have always loved to cook. When I was little I used to put on cooking "shows" for my younger sibling or dolls or an imaginary audience. I love to watch people as they try what I made. If you talk to my husband he will tell you that I am constantly asking him how our meal was. In fact I think I have annoyed him on a few occasions by asking about a meal a number of times. I love to experiment with food. I find recipes and then I tweak them until they become my own creation. This is one of my first experiments and it came out wonderful the first time I made it.

Crockpot French Onion Soup

You need:
6 cups beef broth
2 tbsp butter
2 tbsn olive oil
4 med to lg onions
2 tsp Worcestershire
sauce
pinch thyme
1 bayleaf
1 clove garlic crushed
salt and pepper to taste
1 loaf french bread
mozzarella cheese

I start by slicing the onions thinly.In a large pan melt the butter and olive oil over medium heat. Once the butter has melted I add the onions. Stirring frequently, I cook them until they are clear (normally this takes about 20 minutes.)



In the crock-pot I mix the broth, Worcestershire sauce, thyme, bayleaf and garlic. Then I add the cooked onions. I let the soup cook in the crock-pot most of the day (this ends up being anywhere from 6-8 hours).




After the soup has finished cooking, I put it into oven safe bowls. Then I top it with a thick slice of french bread and mozzarella cheese. I put it in the oven under the broiler until the cheese is bubbling.
